"The second important thing for us is the character," which comes from a deep understanding of how vintages are affected by the weather each year, and the third element is the "soul" of the wine – "that is the people that are around in the vineyard and in the cellar. We think it's very important that these people are happy and understand [our philosophies] and do the work."
